Tarragon, also known as Dragon Sagewort, is an herbaceous perennial in the sunflower family.
An ancient herb cultivated for thousands of years, tarragon was historically used medicinally for the treatment of indigestion, tooth-aches, and other ailments.
Today it is a favorite of home gardeners and chefs alike due to its unique licorice-like flavor and pleasant aroma. Try adding it to vegetable dishes, soups, cheeses, egg dishes, fish, or white sauces!
Grows to between 18 and 25 inches in height. Harvest leaves from late spring to early fall.
Leaves are best used fresh but can be dried and stored in air-tight containers for use in winter.

Start indoors several weeks before the last spring frost. Sow seeds on the soil's surface in seed trays or flats. Seeds require light to germinate, so do not cover with soil. Place trays beneath a grow light and keep soil moist until germination, which should occur within 7 to 14 days.
Transplant outdoors once the plants have their second set of true leaves and the danger of frost has passed. Space plants 18 to 24 inches apart in moist, nutrient rich soil. Plants do best in full sun but tolerate partial shade.
